Organic Food Industry -- Karen Klonsky, a farm management specialist at UC Davis, studies the organic food industry, which is increasing sales by 20 percent a year. Future growth and the mix of commodities produced, she says, will ultimately be determined by several factors including regulation, consumer adoption and the entry of mainstream producers, manufacturers and retailers into the organic market.
